Starter evo theories are all fitting into place.
So, since we know Rockruff gets two different forms for its final evolution, and it's heavily suggested the Starters get this too, I should give you a piece of information that helps this and past theories.
So, we're assuming that the starters we know are only the Night versions. Litten is Dark and they give a general dark theme. But Rowlet still resembles a burrowing owl so much, so why doesn't it become a burrowing owl in its final evolution?
Burrowing owls are diurnal. Bam. It makes so much sense for Rowlet to become a Grass/Ground burrowing owl in its Day evolution now.
Litten could also become a pure Fire tiger in its Day evolution, a

September CoroCoro: Rockruff's evolution has a different form depending on whether it evolves at day or at night.
So, uh, pretty sure we're getting two different forms for the starter evolutions. Thank goodness, there's still hope for Litten and Popplio. I'm guessing the ones we know are the night forms.
Theory on Samson Oak
Okay, so remember that hidden battle with Professor Oak in Gen 1?
What if Samson Oak has that same team, but all with Alolan Forms instead, and he's one of the final bosses?
However, since it wouldn't make sense for the Starter to be based on version since there's two versions instead of three, and it would be weird to have one of the final battles have only 5 Pokemon, it could be the Alolan Gen 1 Starter that's weak to your starter and the regular Alola Starter that's strong against yours. (So if you picked Rowlet, he would have Litten's final evolution.
That would give us Alolan Tauros, Alolan Exeggutor, Alolan Arcanine, Alolan Gyarados,
